I want to delete app icons from my screen and delete apps I do not use now or ever intend to use. Also, how do I close apps that I have opened and am done with? Do they stay open and continue to use battery power even if I have exited a particular app?

To delete an app hold the app icon down for a few seconds like your going to move the icon and you should see x's pop up on the apps that can be deleted, the preinstalled apple apps can't be uninstalled unless your iPhone is either jailbroken or running iOS 10 (Which the 4s won't be getting)
To close running apps double click the home button and it will bring up all the apps currently running on a series of screens, swipe the screen showing the app you want to close upward and it will be closed.

It's really easy to delete a App, just hold it and when the " x" appear, click the " x".
But t if you want to mass delete many apps, then it will be a little complex, you can choose to delete them one by one with the method above, or you can go to iTunes to do it, at last, if you want to do it in a more simple way, you can also try the related software.
