I have seen the guide about lifting up the flap on the connecting strip, however my IPOD Photo does not have this connecter and the hard drive cable is seemingly only held on by tape?!?!?!
I have it all in pieces with new parts but cannot figure out how to re-attach this cable.
Ideas?

If you do not see the little (i believe black) tab that should flip down to hold the hard drive connector in place, there is a good chance it has been broken off the motherboard. You can either try to just stick in the hard drive connector and hold it on with tape (probably not a good long term solution) or you'll probably need to get a new motherboard.

just a really simple question. Did you check under the tape? Every iPod that i have has the tape over the connector. like iTronicsRepair mentioned, look for the black locking tab on the connector and you will have to flip it toward the cable to open the connector.
