Use OWC SSD from Mid 2010 iMac in Late 2019 iMac
Can I swap the fusion drive in a new 2019 21.5” iMac with a relatively new OWC 3G 2TB SSD upgrade from my 27” mid 2010 imac?

While your OWC SSD will work, it won’t be very fast as its only a SATA II (3.0 Gb/s) Vs what this system can support either a SATA III (6.0 Gb/s) or via a 8.0 GT/s NVMe/PCIe x4 blade SSD.
Remember you can’t use the Fusion Drive’s blade SSD with your OWC 2 TB SSD in a Fusion Drive set.
I would recommend getting an external drive case USB or USB-C/TB3 to hold your OWC drive and call it a day.
If you want to really want to goose your systems performance I would break the Fusion Drive set, take out the PCIe cache drive and put in a 512 GB or larger blade SSD like: OWC Aura Pro X2

Thank you so much for your quick response and the link to the OWC drive. I think your idea on creating an external drive would certainly be easiest. But, in case I can plop down some cash, I have a couple of follow-up questions:
I'm not sure I understand your statement:

Can you please explain?
And lastly, by saying "break the fusion drive set" do you mean to separate the SSD-component from the HDD and connect the Aura Pro X2 in addition to the HDD? So, I can use the new SSD and the HDD as 2 separate drives?
Linking the PCIe blade SSD (Fusion cache drive) with your OWC 2.5" SSD will only slow down your I/O access as the cache drive is not very large only a 32 GB drive. SSD vs FUSION DRIVE • Speed Comparison
Remember your Fusion drive uses two drives! A SATA HDD and the PCIe blade SSD as the caching drive using the tow drive ports your system offers
What confuses people is the physical drives are still independent of each other, just via software linked together (fused).
