I am trying to replace my 12 Pro power button cable and I see it is bound to the wireless charger. If I remove that flex and install the one without the wireless charging, will the phone work?

yes, but you must be aware that you will lose the inductive charging function. Tapes without an induction coil available on the market are just a cheaper version of the one with an induction coil. There is a field for soldering. I see no obstacles (if you can) to solder a new tape in place of the old one. If you don't feel up to it, find a good repair shop and order it
