the iPod doesn't actually turn off instead it enters a sort of sleep mode this is put in there by apple to save battery life. if you want to wake your iPod out of sleep mode simply click a button on the click wheel. also if you look closely you should see the current time along with the battery level displayed faintly while music still plays.
