The iPod Seventh Generation, marketed and sold as the "iPod Classic", was released in September 2009, and did not have any visible differences compared to the previous version. It simply replaced the previous 120GB iPod Classic 6.5 with a thin 160GB version.
Why does new audio jack still only play audio in one ear?
I replaced the audio jack in my Ipod Classic 7th Gen because it would only play audio in one ear, two years if I tilted the ear bud base in the jack. Earphones work fine, no issues. I put in a new audio jack, but it still only plays audio in one ear. I love my iPod and I was really hoping this would fix it. I'm super frustrated.

I would feel the same way if that happened to my iPod Video! But anyway, there are multiple possibilities to what is making that happen
Hypothesis 1: The ribbon cable is just not plugged in well enough or latched down all the way, that could happen.
Hypothesis 2: Maybe something is wrong with the audio files that you put onto it. Try plugging your iPod into your computer ant try to listen to those audio files with your computer.
Hypothesis 3: Did you double check to see if your earphones actually work? I am not doubting the fact that you say that your earphones work, I am just saying that it could be a possibility.
Hypothesis 4: Now this is the part where training matters. It could be the ribbon cable port for the headphone jack/hold switch that is causing the problem and the solder points has become weak over time. It could also be the latch of the ribbon cable port that has become too weak to keep the ribbon cable in place, or has snapped. If you know on how to microsolder, then you might be able to just replace the port. However, if you don't know how to microsolder, then I heavily suggest that you replace the whole motherboard. If the latch is the problem and it snapped, then it is as simple as getting a new ribbon cable port and CAREFULLY removing its latch and putting the latch onto the port already on the motherboard.
