Chicken and veggies from Costco. It's probably kinda healthy, easy to make, leaves few dishes, and is only a few bucks per plate.
The best thing about this dish is it requires zero prep, and you can make as little or as much as you want.

Buy:

Tyson Panko chicken breast tenderloins

Stir-fry vegetable blend

Have:

Salt and pepper

Olive oil

400 degrees for 20 mins.

Put the chicken in.

Spend five minutes doing something else.

Get a pan and a lid.

Heat up the pan until the oil is shimmering.

Use a medium-high heat

Wait until the chicken has ten minutes left.

Pour the frozen veggies into the pan and cover for five minutes.

Take the lid off, add salt and pepper, and stir.

Cook on med-high for another few minutes, stirring regularly.

Put some mustard on the chicken if you're into that sort of thing.
