Discolored pixels that go away when I lock the device and hit it.

I have a 2nd generation iPod Touch that I don't use anymore (I upgraded to a 4th generation) but I just wanted to ask this question, as I occasionally use it for certain things, and it almost always has a new discolored pixel.

That symptom sounds like a broken lcd. You should replace the lcd with a new one by following the guide here. Be careful as iPod Touches are quite hard to repair. Hope this helps.
