Replaced my screen twice and now my 8gb iPhone 3GS has a dim screen. I've plugged it into itunes and backed it up ready for a restore. Once I restore it and then upload the back up to it, how much of my old data will I have? Contacts? Whatsapp messages? Apps? Everything? Nothing? Thanks everyone.

If you recently backed up the device, everything that you backed up should be restored to the device. Just make sure that your backup was set to backup everything on the device (contacts, apps, messages, etc.)

There are various third-party iPhone Backup Extractors that should be able to pull the photos from the backup file, just FYI. Both Mac and Windows. Of course, since iTunes overwrote the backup file the OP wanted, doesn't really help in this case.

If you have already backed up your iPhone with iTunes, you can get the deleted data back by the following steps using iTunes:
Click the File menu and select Devices > Restore from Back up.
Or
Open the iOS device's Summary tab. There are two ways to access this:
Click the device button in the upper right corner. (If viewing the iTunes Store, click the Library button in the upper right corner. The device button will then be visible.)
From any view in iTunes, click the View menu and select Show Sidebar. Select your iOS device in iTunes under Devices.
Click the Restore Backup button.
If haven't had time to back up your iPhone before the deletion, you can restore iphone with MobiKin Doctor for iOS
